With a few stable items, you can have these bad boys ready in 20 minutes or less and have the perfect Saturday baked good!

Here’s what you need:

1/2 cup pumpkin puree

1 whole egg

2 egg whites

1 tbsp vegetable or canola oil

1 cup flour

1 tsp baking powder

1 tsp unsweetened cocoa powder

1/2 tsp ground cinnamon

1/2 tsp ground allspice

1/4 tsp ground nutmeg

1/4 tsp salt

2/3 cup brown sugar, packed

1/2 cup semi sweet chocolate chunk or pieces

1/2 cup spiced pumpkin seeds ( this is optional, found at trader joes }

Preheat oven to 350˚F.  Line an 11″- x 7″-inch pan with parchment paper.

In a large bowl, combine pumpkin puree, eggs and oil until smooth..  Set aside.

In a separate bowl, mix together your flour, baking powder, spices, salt and brown sugar.  Then you’ll add in the wet ingredients and mix until thoroughly combined. Then pour in the chocolate.

Pour into prepared pan.  Bake for 5 – 20 minutes. Check with a toothpick in between the time, if it comes out clean, they are done!

Followed by sprinkling the pumpkin seeds on top.

Trust me on this… ready set, go make this new fall favorite! 🙂
Hope you enjoy these as much as I did!
